Tasty Tuesday!

Pineapple Angel Lush Cake

Ingredients:

1 pkg (4-serving size) Jell-O Vanilla Flavor instant pudding and pie filling (I used sugar free)

1 can (20 oz) Dole crushed pineapple in juice, undrained

1 cup thawed Cool Whip (I used lite)

1 pkg (10 oz) prepared angel food cake

10 small strawberries

Directions:

  • Mix dry pudding mix and pineapple w/ juice in medium bowl. Gently stir in whipped topping
  • Cut cake horizontally in 3 layers
  • Place bottom cake layer, cut side up, on a serving plate. Spread 1-1/3 cups of the pudding mixture onto cake layer; cover with middle  cake layer. Spread 1 cup of the pudding mixture onto middle cake layer; top with remaining cake layer. Spread with remaining pudding mixture. Refrigerate at least one hour or until ready to serve. 
  • Makes 10 servings

I'm back

I can't believe I haven't posted since last Monday.  Let me fill you in on a few things.....

Wednesday: Dinner & a movie with friends

Something Borrowed.....I finished the book last Tuesday and loved it.  I was so excited to see the movie and was keeping my fingers crossed it wouldn't disappoint.  Although I liked the book more, I still enjoyed the movie....especially Colin Egglesfield :)

Thursday: Kenny Chesney concert



I love Kenny Chesney and was super excited to see him (again) in concert.  It's the first time he's been back to Columbia since he broke his foot (2008), and I was beyond excited.  It was an awesome show and I had a fantastic time :)

Friday-Sunday: Macon, GA for Brett & Connie's wedding weekend

Brett and Connie are an amazing couple and are so much fun to be around.  Kris and I are so happy for the both of them and we were honored to be a part of their special day.

Weekend Recap

Hope everyone had an amazing weekend.  Here's my weekend recap.......

Friday: After a busy week at work, Kris and I enjoyed a relaxing evening at the condo.  Dinner and a movie.....a perfect evening!

I love our new place mats, table settings,  and glassware :)

Saturday:  Unfortunately, Kris had to go into work for a few hours to help out with high school physicals.  Boo for having to get up early on a Saturday :( I went to the gym for a bit then came back here to get ready and pack up the food and gifts for Alecia & Trey's shower.

Weather forecast was 50% chance of rain but the morning/early afternoon started off nice and sunny.  We (Meredith, Jamie, and I) set up everything outside in the backyard near the bar and pool.  People started to arrive around 3:00pm and within 20 minutes the sky became dark, thunder was roaring, and rain was inevitable.  One minute it was beautiful and the next, a torrential downpour.  It was insane...... we were running around like chickens with our heads cut off trying to move all the food, beverages, and gifts inside till the weather cleared up.  Thankfully the rain passed and we spent the rest of the afternoon and evening outside :)

Sunday: Kris and I went to Cirque du Soleil.  It was amazing!  If you ever have the chance to see one of their shows, you have to go.  It's totally worth it :)

After the show, Kris and I had a early dinner and drove over to Lexington to check out the progress of our house :)

It's so exciting to see the progress and we can't to move in :)   Closing date is June 20th so it won't be much longer.

Lots of fun and exciting things to look forward to this week......movie night with the girls, Kenny Chesney concert with Susanna, then off to Macon, GA, for Connie and Brett's wedding weekend.  YAY!
